                                                      The cherry clafoutis                                           



                                                                                  
                                                                                 

The clafoutis is very similar to pastry flan except that adds cherry and a touch of lemon. It will have a flavor sought the blank and prepared during the cherry season not before. The use of frozen cherries is not recommended because they are less tasty and make a lot of water when cooking.



Step 1 :

1 Prepare pastry as in the basic recipe.

2 Make the pre-bake for 10 minutes at 180 °.

For clafoutis:

ingredients:

- 1 lemon

- 175 g caster sugar

- 1 pinch of salt

- 50 g cornstarch

- 50 g flour

- 3 whole eggs plus 2 yolks

- 30 cl milk

- 30 cl cream

- 500 g pitted cherries.

Warning: Pit the cherries gently to avoid damaging them too and they make all their juice during cooking.

Preparation:
1 In a bowl whisk together the sugar lemon zest, then add salt, cornstarch and flour.

2 Add the eggs and egg yolks.

3 Pour finally the milk and cream and mix well.

4 Add the cherries, pitted beforehand.

5 Pour the mixture over the broken pre-baked dough and bake for about 40 minutes at 170 °.
